1. Set the oven at 190°C (375°F) gas 5.
2. Wash and core the apples but do not peel them. With a small rounded spoon, hollow out part of the flesh surrounding the core hole. Do not break the outside skin.
3. In a bowl, mix together the nuts, raisins and rice, using enough rice to make a stuffing for all the apples.
4. Add the sugar, with enough egg to bind the mixture.
5. Melt the butter and stir it into the mixture.
6. Fill the apples with the rice mixture. Place in a roasting tin and add hot water to a depth of 5mm/1/4 inch.
7. Bake for 40 minutes or until the apples are tender.
8. Remove the roasting tin from the oven and transfer the apples to a warmed serving platter, using a slotted spoon.
9. Warm the fruit syrup and pour it over the apples.
