1. Place the apples, apple juice and cinnamon in a saucepan, cover and simmer gently for 15 minutes, stirring occasionally. Add the sultanas and leave to cool with the lid on.
2. Meanwhile make the pastry: place the flour in a bowl and rub in the margarine until the mixture resembles breadcrumbs. Add enough water to mix to a firm dough, then turn onto a lightly floured surface and knead lightly. Chill for 15 minutes.
3. Roll out the pastry thinly on a floured surface. Cut out about ten 7.5 cm and ten 5 cm circles.
4. Use the larger circles to line 10 patty tins. Place a spoonful of the apple mixture in each. Dampen the edge and top with the remaining circles.
5. Press the edges to seal, make a hole in the centre and brush with milk. Sprinkle with the sesame seeds.
6. Bake in a preheated oven, 200°C, 400°F, Gas Mark 6 for 15-20 minutes until golden. Serve warm or cold.
