Gooseberry sauce can be used for any fish; it is essentially a simple fruit sauce.
ingredients
makes about 150 ml (1/4 pint)
225g (8 oz) gooseberries
a little water
a knob of butter
a little honey, to taste
method
1. Wash, top and tail the gooseberries and cook in a little water until tender.
2. This quantity will reduce down to 150 ml (1 pint). The sauce can be served like this. If not, blend it into a smooth puree, and stir in the knob of butter.
3. If it is very tart, add a teaspoon of honey. A tablespoon of yogurt, cream or fromage blanc can also be stirred in.
