Season with a pinch of salt and crushed peppercorns
1. Clean, wash, bone and split the fish if needed
2. Place in a large baking dish, sprinkle with the onion, seasonings and lemon juice then pour over the wine vinegar and water.
3. Bake in a moderate oven (180c, 350F, gas4) for 20 to 25 minutes.
4. Using a perforated spoon, lift out the fish and arrange on a serving dish.
5. The dish can be served warm or chilled.
6. Garnish with sprigs of mint, if wished, and serve accompanied by the blackberry sauce.
7. To make the sauce peel, core and chop the apples.
8. Bring the blackberries, apple and sugar to the boil in a little water then add the wine, spices and fish liquid.
9. Cook gently for about 5 minutes. Swirl in the natural yogurt and chill.
