1. For the milk layer: Heat the milk in a medium size saucepan with the cardamom seeds until just below the boil then remove from the heat and leave to stand for 5 minutes. Strain to remove the cardamom seeds.
2. Mix the cornflour and sugar with the water. Pour some of the warm milk into the cornflour mixture and stir until well blended, then pour it back into the milk. Bring to the boil then reduce the heat and stir continously until the mixture thickens.
3. Allow the mixture to cool slightly before pouring it into the base of 4 glasses or tumblers. Cover and refridgerate for approximately 2 -3 hours.
4. To make the orange layer: Mix the cornflour with the lemon juice and blend with some of the orange juice before pouring it all into a medium size saucepan.
5. Place the saucepan over a medium heat and bring to the boil, stirring continously until the mixture thickens. Remove from the heat and allow to cool slightly before pouring carefully over the milk layer.
6. Cover and chill well before serving.
