Oven baked Fish Grenadier

ingredients

serves 4
6 small cod or hake fillets, skinned
2/3 cup (150 ml) 1/4 pt milk
4 oz (100 g) fresh breadcrumbs
2 tablespoons chopped parsley
2 tablespoons chopped fresh dill
coarsely grated rind of 1 lemon
salt
pepper
1/2 stick (4 Tbsp) 2 oz (50 g) butter, melted
paprika
lemon wedges to serve

method

1. Dip the fish in the milk.

2. Mix together the breadcrumbs and herbs and use to coat the fish.

3. Arrange them in a buttered baking dish.

4. Sprinkle over the lemon rind, salt and pepper, then pour on the melted butter.

5. Bake in a hot oven 230°C (450°F) Gas Mark 8 for 15 minutes.

6. Sprinkle with a little paprika and serve with lemon wedges.
