Chocolate Custard Pots

ingredients

serves 4 - 6
3 oz (75 g) plain chocolate, broken into pieces
2 tbsp (25 g) 1 oz butter
2 eggs, separated
1 egg yolk
2 tablespoons sweet sherry or white wine
whipped cream and chopped pistachio nuts to decorate

method

1. Melt the chocolate gently with the butter in a heatproof basin placed over a pan of hot water.

2. Remove from the heat and beat in the egg yolks. Stir in the sherry or wine. Cool.

3. Whisk the egg whites until stiff and fold in the chocolate mixture.

4. Turn into a serving dish or individual dishes and chill until set.

5. Decorate before serving.
