Young Marrows au Gratin

ingredients

serves 4
3 or 4 small marrows, peeled and chopped
salt and pepper
1/3 cup 65 g (2 1/2 oz) butter
3 tablespoons cream
1 egg
2 oz (50 g) cheese, grated

method

1. Put the marrows in a saucepan with salt, pepper and a very little water.

2. Cook gently until the marrows are tender.

3. Drain if necessary and turn into a heated ovenproof serving dish.

4. Mix together 50 g (2 oz) of the butter, the cream and egg and fold into the marrows.

5. Add a little of the cheese and salt and pepper.

6. Sprinkle the remaining cheese over the top and dot with the rest of the butter.

7. Cook in a preheated hot oven 220°C (425°F) Gas Mark 7 for 5 to 10 minutes or until lightly browned.

Can marrows be frozen?

Answer. No, marrows have too high a water content to be frozen, they will turn to mush when defrosted.

Marrows aka giant zuccihis can be frozen by grating and squeezing out water. Plenty of advice on line. Search for freezing zucchinis
