Latkes (Potato Pancakes)

ingredients

serves 4 - 5
1 lb (450 g) potatoes, peeled and grated
1 onion, grated
salt
pepper
1/2 teaspoon chopped parsley
1 egg, separated
1 tablespoon flour
fat for shallow frying

method

1. Drain the liquid from the grated potatoes, then mix in the onion, salt, pepper, parsley and egg yolk. Mix in the flour.

2. Whisk the egg white until stiff and fold into the potato mixture.

3. Form the mixture into flat cakes and shallow fry until golden brown on both sides and cooked through.
