1.2 litres (2 pints) bacon or ham stock
8 oz (225 g) lentils
1 onion, chopped
1 large carrot, grated
1 teaspoon chopped parsley
snippets of fried bread to serve
method
1. Remove all the fat from the stock, then bring it to the boil in a saucepan.
2. Add the lentils and onion and simmer for 1 hour 10 minutes.
3. Add the carrot and parsley and stir well. Simmer for a further 20 minutes or until the lentils are very tender and cooked down.
