Low Calorie Tomato and Lettuce Soup

ingredients

serves 4
1 lb (450 g) tomatoes, finely chopped
4 oz (100 g) lettuce, finely chopped
8 oz (225 g) onions, finely chopped
2 beef stock cubes
2 litres (3 1/2 pints) water
1 tablespoon fresh marjoram, chopped
salt
pepper
natural (plain) yogurt to serve

method

1. Put the tomatoes, lettuce and onions in a saucepan. Crumble in the stock cubes, then add the water and marjoram.

2. Bring to the boil and simmer for 30 minutes. Cool, then blend the soup to a smooth puree.

3. Add salt and pepper and strain through a fine sieve.

4. Reheat and serve with a spoonful of yogurt in each serving bowl.
