Fillets of Sole Cardinal recipe

ingredients

4 sole fillets
2/3 cup (150 ml) 1/4 pt white wine
salt
pepper
hot mashed potatoes
2/3 cup (150 ml) 1/4 pt hot white sauce
4 slices of lobster back, or 4 oz (100 g) shelled prawns, warmed through

method

1. Fold the fillets in half and arrange in a buttered baking dish.

2. Pour over the wine and sprinkle with salt and pepper.

3. Leave for 10 minutes, then bake in a preheated moderately hot oven 200°C (400°F) Gas mark 6 for 10 minutes or until cooked.

4. Pile the mashed potatoes in the centre of a warmed serving dish.

5. Arrange the fillets on the potatoes, overlapping each other.

6. Coat the fillets with the sauce and garnish with the lobster or prawns. Serve hot.
