6 hard-boiled eggs, chopped
750 g (1 1/2 lb) potatoes, peeled, cooked and mashed
3 oz (75 g) cheese, grated
2 tablespoons chopped spring onions or chives
salt and pepper
2 eggs, beaten
dry breadcrumbs for coating
oil for deep frying
1. Mix together the hard-boiled eggs, potatoes, cheese, spring onions or chives, salt and pepper.
2. Form into egg shapes, then dip in the beaten eggs and coat with breadcrumbs.
3. Deep fry until golden brown and drain on paper towels.
4. Serve hot or cold.
