Eggs en Cocotte recipe

ingredients

1 x 275 g (10 oz) packet frozen creamed spinach
4 eggs
4 tablespoons single cream
salt
pepper
4 oz (100 g) Cheddar cheese, grated

method

1. Cook the spinach according to the directions on the packet.

2. Cool slightly, then divide it between four cocotte or ramekin dishes.

3. Break an egg into each dish and coat with the cream.

4. Add salt and pepper and sprinkle over the cheese.

5. Place the ramekins in a shallow baking dish of warm water and bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 25 to 40 minutes or until the eggs are just set and the cheese is melted and golden brown.
