Crab Salad

ingredients

serves 4
350 g (12 oz) frozen crab meat, thawed
2 eating apples, peeled, cored and diced
little lemon juice
4 celery stalks, sliced
1 x 12.5 cm (5 inch) piece cucumber, diced
lemony mayonnaise
salt
pepper
shredded lettuce to serve

method

1. Flake the crab meat, mixing together the white and brown meat.

2. Sprinkle the apples with lemon juice to prevent them turning brown and add to the crab meat with the celery and cucumber.

3. Fold in enough mayonnaise to make a creamy consistency and add salt and pepper.

4. Serve on a bed of shredded lettuce in a bowl or individual glasses.
