Stock for poaching fish; needs no preliminary cooking.
makes 600 ml (1 pint)
1 1/4 cup (1/2 pint) 300 ml milk
1 1/4 cup (1/2 pint) 300 ml water
2-3 lemons, peeled and sliced
1 bouquet garni
1. Poach the fish in this mixture but do not allow it to boil.
2. Transfer the fish to a heated serving dish and use the stock as required.
