200 ml (1/3 pint) dry cider
7 g (1/4 oz) root ginger, bruised
twist of lemon rind
1 tablespoon honey
method
1. Put the cider, ginger and lemon rind in an aluminium, stainless steel or enamelled saucepan and heat until bubbles just begin to rise in the liquid.
2. Remove from the heat, stir in the honey and strain into a warmed glass.
