Crab and Potato soup

ingredients

serves 4 - 5
1 lb (450 g) potatoes, peeled and chopped
1 pint (600 ml) stock
8 oz (225 g) fresh or canned crabmeat, flaked
1 garlic clove, crushed
1 tablespoon chopped fresh chives
salt
pepper
2/3 cup (150 ml) 1/4 pt milk

method

1. Put the potatoes and stock in a saucepan and bring to the boil.

2. Simmer until the potatoes are tender.

3. Sieve or blend to a puree, then return to the pan.

4. Add the crabmeat, garlic, chives, salt and pepper and simmer gently for 5 minutes.

5. Stir in the milk and heat through.
