Chicken Sicilian

ingredients

serves 4
4 chicken pieces
25 g (1 oz) margarine
1 onion, chopped
2 oz (50 g) mushrooms, chopped
150 g (5 oz) natural yogurt
2 eggs, beaten
1 1/4 cup (1/2 pint) 300 ml milk
1/2 teaspoon ground ginger
1/2 teaspoon grated nutmeg
boiled rice to serve
5/8 cup (50 g) 2 oz flaked almonds to garnish (optional)

method

1. Cook the chicken pieces until tender, then remove the meat from the bone.

2. Melt the margarine in a saucepan and fry the onion and mushrooms until the onion is softened.

3. Add the chicken meat.

4. Mix together the yogurt, eggs, milk and spices and stir into the chicken mixture.

5. Bring to the boil, stirring well.
