Cheese and Spinach Eggs

ingredients

serves 4
1 lb (450 g) spinach, cooked, well drained and chopped
4 hard-boiled eggs, halved
2 tbsp (25 g) 1 oz butter
3 tbls (25 g) 1 oz flour
1 1/4 cup (1/2 pint) 300 ml milk
4 oz (100 g) cheese, grated
cayenne pepper

method

1. Spread the spinach out in a buttered baking dish.

2. Arrange the egg halves on the spinach, cut sides down.

3. Melt the butter in a saucepan and add the flour.

4. Cook, stirring, for 2 minutes, then gradually stir in the milk.

5. Bring to the boil and simmer, stirring, until thickened.

6. Stir in the cheese until melted.

7. Pour the cheese sauce over the eggs and sprinkle the top with a little cayenne.

8. Bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 30 minutes or until the cheese sauce is bubbling.
