Boiled Pressed Brisket of Beef

ingredients

serves 24
3.5 kg (8 lb) good quality pickled brisket of beef
6 onions
6 carrots
1 turnip
little celery if in season

method

1. Put the brisket in a saucepan of boiling water with the vegetables and simmer gently for 3 to 4 hours.

2. Leave to cool in the liquid.

3. When still just warm, drain the brisket, discard all the bones and place the meat in a dish.

4. Press with a board and weight and leave for 12 hours.
