Tomato Surprises recipe

ingredients

8 medium tomatoes
2 hard-boiled egg yolks
mayonnaise
salt
pepper
8 pickled walnut halves
lettuce to serve

method

1. Cut the tops off the tomatoes. Scoop out the pulp and mix this with the egg yolks, a little mayonnaise and salt and pepper.

2. Put a walnut half in each tomato and fill with the mayonnaise mixture.

3. Replace the tops and serve on a bed of lettuce.
