1. Melt the butter in a saucepan and stir in the flour.
2. Cook, stirring, for 1 minute, then gradually stir in the milk.
3. Cook, stirring, until thickened. Remove from the heat and cool a little, then stir in the egg yolks, salt, pepper and cheese.
4. Whisk the egg whites until stiff and fold into the cheese mixture.
5. Spoon into a buttered 15 cm (6 inch) casserole or souffle dish.
6. Bake in the centre of a preheated moderately hot oven 190°C (375°F) Gas Mark 5 for 25 to 30 minutes or until risen and golden brown.
7. Serve immediately.
