Bean Slaw

ingredients

serves 4
1 lb (450 g) runner beans, sliced
3 oz (75 g) walnuts, chopped
4 celery stalks, chopped
2 eating apples, cored and chopped
2 large carrots, cut into thin sticks
4 to 6 tablespoons French dressing
2 tablespoons finely chopped onion to garnish

method

1. Cook the beans in boiling salted water until just tender.

2. Drain, rinse in cold water and drain again. Cool.

3. Add the walnuts, celery, apples, carrots and dressing to the beans and fold together thoroughly.

4. Turn into a salad bowl and garnish with the onion.
