Baked Whiting with French Mustard Sauce

ingredients

serves 4
4 whiting, cleaned and filleted
salt pepper
2 tablespoons finely chopped onion or spring onion
4 tablespoons dry white wine or cider
1 tablespoon French mustard
1 tablespoon grated lemon rind
juice of 1/2 lemon
1 tablespoon chopped parsley
2 tbsp (25 g) 1 oz butter
2 tablespoons cream (optional)
chopped parsley to garnish

method

1. Lay the fillets in a buttered baking dish. Sprinkle with salt, pepper and the onion or spring onion.

2. Mix together the wine or cider, mustard and lemon rind and juice and pour over the fish.

3. Cover the dish and bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for about 30 minutes or until tender.

4. Strain the cooking liquor into a saucepan and simmer for 2 to 3 minutes.

5. Stir in the parsley, butter and cream, if used, and heat through gently.

6. Arrange the fish fillets on a warmed serving dish and pour over the sauce. Garnish with parsley.
