1. Put the apples in a saucepan with a little water and poach gently until they are tender, but not mushy.
2. Drain and arrange in a baking dish. Fill the hollows with the mincemeat.
3. Whisk the egg whites until stiff. Add 4 teaspoons of the sugar and continue whisking for 1 minute, then carefully fold in the remaining sugar.
4. Pile this meringue on the apples and swirl around to cover them.
5. Bake in a preheated hot oven 220°C (425°F) Gas Mark 7 for 10 minutes or until the meringue is golden brown.
6. Serve with hot chocolate sauce.
