ingredients
makes about 150 ml (1/4 pint)
1 small onion or 2 shallots
2/3 cup (150 ml) 1/4 pt dry white wine
2/3 cup (150 ml) 1/4 pt double cream (heavy cream)
1 pinch of saffron powder
method
1. Finely chop the onion or shallots and place in a saucepan with the wine. Bring to the boil and simmer until the wine is reduced to 1 tablespoon.
2. Remove from the heat, stir in the cream and saffron powder.
