Apple Quencher

ingredients

makes 1.2 litres (2 pints)
1 lb (450 g) apple skins and cores
1 pint (600 ml) water
pinch of ground ginger or cinnamon, or juice and grated rind of 1/2 lemon
2 tablespoons sugar
green, yellow or red food colouring (optional)

method

1. Put the apple skins and cores in a saucepan with the water and simmer gently for 10 minutes.

2. Add the spice or lemon juice and rind and the sugar and remove from the heat.

3. Allow to cool, then strain.

4. If the colour is dingy, add a little food colouring.

5. Store in the refrigerator, but do not keep for long.
