4 carrots

method
1. Use a potato peeler to shave the carrots into thin strips.
2. Put these in a salad bowl and add the parsley, salt, pepper and dressing.
3. Dip the apples in lemon juice to prevent discolouration and add to the carrot mixture.
4. Fold together gently. Add the bananas, if using, first dipping them in lemon juice
