Simple Vegetable Casserole

ingredients

serves 6
8 oz (225 g) frozen chopped spinach
8 oz (225 g) frozen chopped broccoli
2 teaspooons cider vinegar
275 g (10 oz) canned condensed cream of asparagus or mushroom soup
salt
pepper
1 tablespoon dried onion flakes, soaked
226 g (8 oz) canned tomatoes, drained and chopped
4 oz (100 g) cheese, grated

method

1. Cook the spinach and broccoli in separate pans for half the cooking time specified on the packets.

2. Add 1 teaspoon vinegar to each pan.

3. Mix the soup with salt and pepper. Drain the spinach and broccoli and stir into the soup.

4. Turn into a greased baking dish and top with the onion flakes and tomatoes. Sprinkle over the cheese.

5. Bake in a preheated moderate oven 160°C (325°F) Gas mark 3 for 40 minutes or; until the top is golden brown.
