The Versatile Cake and Friends

ingredients

175 g (6 oz) margarine
2/3 cup (150 g) 5 oz caster sugar (superfine granulated)
3 eggs, beaten
1 1/2 cups (175 g) 6 oz self raising (self rising) flour

method

1. Cream together the margarine and sugar.

2. Gradually beat in the eggs, then fold in the flour.

3. Divide between two greased and lined 20 cm (8 inch) sponge cake tins.

4. Bake in a preheated moderately hot oven 200°C (400°F) Gas Mark 6 for 30 minutes or until golden brown and well risen.

5. Cool on a wire rack.

6. When cold, sandwich together with buttercream, walnut filling, banana frosting or praline and buttercream.
