Whey Cakes

ingredients

2 cups (225 g) 1/2 lb wholemeal (whole grain) flour
1 tsp (5 ml) Mixed Spice (All Spice / Pumpkin pie spice)
2.5 ml (1/2 tsp) Bicarbonate of soda (Baking soda)
2.5 ml (1/2 tsp) salt
100 g (1/4 lb) 1/2 cup vegetable margarine (shortening)
2 oz (50 g) 1/4 cup sultanas (golden raisins)
2 oz (50 g) 1/4 cup raisins
7 fl oz (200 ml) 7/8 cup whey from yogurt cheese

method

1. Heat the oven to 200°c (400°f) gas mark 6

2. Put the flour into a bowl with the spice, soda and salt and rub in the margarine. Toss in the fruits with your fingers.

3. Make a well in the centre of the flour and pour in the whey.

4. Form the mixture into a sticky dough.

5. Flour a baking sheet and drop small portions of the dough onto it (it should make 16 small cakes).

6. Bake them for 20 minutes and lift them onto a wire rack to allow them to cool.
