Courgette (Zucchini) Omelet

ingredients

1 lb (450 g) small courgette (zucchini)s
1 medium-sized onion
1 clove garlic
6 eggs
30 ml (2 tbls) chopped chervil or parsley
sea salt
freshly ground black pepper
2 tbsp (25 g) 1 oz butter or 60 ml (4 tbls) oil

method

1. Wipe and thinly slice the courgettes (zucchini).

2. Quarterand thinly slice the onion and finely chop the garlic.

3. Beat the eggs with the herbs (if you are using them) and seasonings.

4. Melt the butter or heat the oil in an omelet pan on a low heat.

5. Stir in the courgettes (zucchini), onions and garlic and cook them until they are soft.

6. Preheat the grill (broiler) to high.

7. Pour the eggs into the pan and cook until they are almost set, tipping the pan and lifting the edges of the omelet with a spatula, so as much of the egg as possible reaches the sides and base of the pan.

8. Put the omelet pan under the grill (broiler) and continue cooking until the eggs are set and the top of the omelet is risen and golden.

9. Either cut the omelet into four portions and serve it hot or slide it onto a plate and leave it until it is completely cold.
