Carob Cake

ingredients

225 g (1/2 lb) 1 cup butter
1 cup (225 g) 1/2 lb Barbados (brown) sugar or molasses sugar
5 eggs, separated
150 g (5 oz) 1 1/2 cups carob powder
2 cups (225 g) 1/2 lb wholemeal (whole grain) flour
2 level tsp (10 ml) baking powder
butter for greasing 20 cm (8 in) cake tin

method

1. Heat the oven to gas mark 2/150°C (300°F).

2. Cream the butter and sugar in a bowl and beat in the egg yolks.

3. Mix the carob powder with the flour and baking powder and gradually add them to the butter mixture (the mixture will become very stiff at this point).

4. Stiffly beat the egg whites and fold them into the mixture.

5. Put everything into a greased 20 cm (8 in) cake tin (pan) and bake the cake for 1 hour 15 minutes.

6. Turn it onto a wire rack to cool.
