method
1. If using cutlets, skin them and remove the small bones in the top.
2. Put the fish into a flat, heatproof serving dish.
3. Put the butter, curry powder, turmeric, orange rind and juice and garlic into a saucepan and set them on a low heat until the butter has melted.
4. Pour the curry mixture over the cod, turning the fish to make sure they are coated on both sides.
5. Preheat the grill (broiler) to high.
6. Put the dish under the heat and cook the cod for 7 minutes on each side or until quite cooked through.
7. Serve them immediately, from the dish.
