1. Fillet the herrings and lay the fillets in a flat, heatproof dish.
2. Beat the rest of the ingredients together and spoon them over the fish.
3. Leave the herrings for 4 hours at room temperature.
4. Preheat the grill (broiler) to high.
5. Put the dish of herrings under the heat and cook until the fish are golden brown on top and cooked through.
6. There is no need to turn them.
7. Serve immediately from the dish.
