Smoked Mackerel with Stir Fried Vegetables

ingredients

serves 4
2 tablespoons sunflower oil
6 medium carrots, thickly sliced
225g (8 oz) broccoli, diced
1 cup (75 g) mushrooms, thickly sliced
4 boiled potatoes, diced
2 tomatoes, quartered
1/2 melon, flesh chopped bite size
salt and freshly ground black pepper
4 hot-smoked mackerel fillets
lemon wedges to serve (optional)

method

1. Heat the oil in a wok or large, heavy, shallow pan. Add the carrots, then the broccoli spears, stir fry for 30 seconds, then add the mushrooms, potatoes and tomatoes.

2. Continue stir frying for 1 minute, add the melon and stir in briskly until just heated through.

3. Season to taste and serve immediately with the smoked mackerel, accompanied by wedges of lemon if wished.
