Herrings in Oatmeal

Herrings in Oatmeal is a traditional Scottish dish made up of fillets and porridge oats just as the title suggests.

ingredients

serves 4
8 Herring fillets
2-3 eggs, beaten
4 oz (100 g) porridge oats
flour for dusting
freshly ground black pepper
1 teaspoon mustard powder
oil for shallow frying

method

1. Dust the fillets with the flour seasoned with the pepper.

2. Dip in the egg and coat in the oats mixed with the mustard powder.

3. Heat the oil and shallow fry until golden brown, about 5 minutes each side, turning once.

4. Drain well, and serve piping hot.

Oatmeal not oats

The recipe calls for oatmeal NOT porridge oats... there is a big difference in texture and the end result.
