6 tomatoes
1 cucumber
1 onion, finely chopped
2 - 3 tablespoons white wine vinegar
1 1/4 cup (300 ml) 1/2 pint water
2 - 3 drops of Tabasco sauce
salt and freshly ground pepper
4 medium mackerel, cleaned
method
1. Peel the tomatoes, remove the pips and dice,
2. Peel the cucumber, cut in half lengthways, scoop out the pips and dice.
3. Place the diced tomatoes and cucumber in a saucepan with the onion, vinegar, water, Tabasco and seasoning to taste.
4. Simmer for about 25 minutes.
5. Meanwhile, make 3 or 4 diagonal slashes on each side of the mackerel, (De-head and tail them also if you prefer.)
6. Season them with a pinch of salt and pepper and grill for 4 to 6 minutes on each side, depending on their thickness.
Serve immediately.
