1. Put the grated chocolate into a large heatproof bowl with 30 ml (2 tbsp) water.
2. Stand over a saucepan of simmering water until the chocolate melts.
3. Remove from the heat and stir until smooth.
4. Beat the egg yolks into the chocolate with a few drops of vanilla essence.
5. In a clean, grease free bowl, whisk the egg whites until fairly stiff, then fold gently into the chocolate mixture until evenly blended.
6. Pour into 4 individual dishes and refrigerate for 1 - 2 hours until set.
7. Decorate with whipped cream and chopped walnuts just before serving.
