1. Gently fry the cod steaks in a little oil for a few minutes on each side.
2. Lift them out of the pan carefully, with a fish slice or spatula, and arrange on the base of a dish suitable to hold the marinade.
3. Make up the marinade with the listed ingredients and pour into the fish juices in the pan.
4. Stir as you bring the marinade up to the boil then simmer for 5 minutes to extract the aroma and flavour of the herbs and spices.
5. Pour over the cod steaks to cover completely. Cool, cover with cling film then refrigerate overnight.
6. To serve, lift the cod steaks on to a serving dish, and pour over the strained marinade.
Garnish with parsley sprigs or fresh tarragon.
