Rich Chocolate Sauce

Plain ice cream becomes a party treat with this wickedly rich sauce. It also makes a very good topping for a chocolate Swiss Roll.

ingredients

makes about 500 ml (17 fl oz)
350 g (12 oz) bitter sweet dessert chocolate, roughly grated
3 tbsp (60 ml) butter
2 tbsp (30 ml) double cream (heavy cream)
1 tsp (5 ml) whisky

method

1. Put the grated chocolate in a saucepan with 200 ml (7 fl oz) water.

2. Heat gently, stirring all the time, until the chocolate melts.

3. Do not let the sauce boil.

4. Add the butter, 5 ml (1 tsp) at a time, and continue stirring until it melts.

5. Remove the sauce from the heat and stir in the cream and whisky.

6. Serve at once.
