1. Prepare a 1.1 litre (2 pint) souffle dish.
2. Set the oven at 180°C (350°F) gas 4.
3. Break the chocolate into pieces and put into a saucepan.
4. Reserve 60 ml (4 tbsp) of the milk in a mixing bowl and pour the rest into the pan with the chocolate.
5. Add the sugar and warm over low heat until the chocolate begins to melt.
6. Remove from the heat and leave to stand until the chocolate is completely melted, stirring occasionally.
7. Add the flour to the bowl containing the milk and stir to a smooth paste.
8. Stir in the chocolate flavoured milk, return the mixture to the clean pan and bring to the boil.
9. Cook for 1 - 2 minutes, stirring all the time, then remove from the heat and add the butter.
10. Stir well, then set aside to cool slightly.
11. Beat the egg yolks into the chocolate mixture one at a time.
12. In a clean, grease free bowl, whisk the egg whites until stiff.
13. Stir one spoonful of the egg whites into the chocolate mixture to lighten it, then fold in the rest until evenly blended.
14. Spoon into the prepared dish and bake for 45 minutes.
15. Dust with icing sugar and serve immediately, with Mocha Sauce or Chocolate Cream Sauce.
