method
1. Put 125 ml (4 fl oz) water in a saucepan.
2. Add the lemon rind or other flavouring and bring to the boil.
3. Lower the heat and simmer gently for 15 minutes.
4. Remove the lemon rind, if used, and stir in the sugar.
5. Return the liquid to the boil and boil steadily for 5 minutes. Add lemon juice to taste.
6. In a cup, mix the arrowroot with 10 ml (2 tsp) water until smooth.
7. Stir into the hot liquid. Heat gently for 1-2 minutes, stirring constantly as the sauce thickens.
8. Remove from the heat once the sauce has boiled.
