Pegasus Carrot Cake recipe

ingredients

250 g self raising (self rising) flour, sieved
2 tsp baking powder
3/4 cup (150 g) soft brown sugar
100 g mixed dried fruit
200 g carrots, peeled and grated
2 small bananas, mashed
2/3 cup (150 ml) 1/4 pt sunflower oil
2 medium size eggs, beaten
1/2 x 200 g tub cream cheese
3/4 cup less 1 tbsp (100 g) icing sugar (confectioners sugar), sieved
1 tube Smarties

method

1. Preheat the oven to 180°C (350°F) Gas Mark 4..

2. Cut a circle of greaseproof paper to fit in the base of a 20 cm loose based cake tin, then lightly grease the base and sides.

3. Mix together the flour, baking powder and soft brown sugar in a large bowl.

4. Add the dried fruit, grated carrot and bananas to the mixture.

5. Beat the oil into the eggs and pour into the bowl. Combine with a wooden spoon.

6. Spoon the mixture into the prepared tin and bake for 1 - 11/4 hours. Insert a metal skewer into the cake, if it comes out clean, then the cake is cooked. Cool on a wire rack.

7. Beat the soft cheese and icing sugar together.

8. When the cake is cold spread the icing over the top and decorate with Smarties.
