method
1. Place the steaks or chops in a bowl with the lemon rind and juice, most of the sage and plenty of seasoning.
2. Leave to marinate for at least 20 minutes.
3. Heat the butter in a griddle or frying pan, add the apple rings and fry for 1 - 2 minutes until golden on both sides.
4. Remove from the pan and keep warm.
5. Add the oil to the pan, allow to heat then add the pork and cook for approximately 12 - 15 minutes, turning halfway until golden and cooked through.
6. Serve the pork topped with the apple rings and sprinkled with the remaining chopped sage.
