Coarse Peppered Steak

ingredients

serves: 1
1 tsp green peppercorns
1 tbls (15 g) 1/2 oz butter
350 g sirloin steak
3 tbsp double cream (heavy cream)
3 tbsp beef stock

method

1. Soak the green peppercorns in warm water for 10 minutes, drain and crush.

2. Melt the butter in a shallow frying pan and when it starts to foam add the steak and cook for 8 minutes on each side. Remove and put to one side.

3. Add the cream to the pan along with the stock and peppercorns, warm through then serve immediately with the steak.
