1. Preheat the oven to 180°C (350°F) Gas Mark 4..
2. Pour the lemon oil in a shallow dish and marinade the fish with the shallots and juniper berries for 10-15 minutes. Remove the monkfish leaving the shallots behind and dry the fish on kitchen paper.
3. Heat a frying pan until very hot and seal each side of the monkfish until well browned. Transfer to an ovenproof tray and place in the oven for 5-6 minutes.
4. Cook the shallots and remaining oil from the marinade with the juniper berries, until softened and golden brown.
5. In a separate pan heat through the green lentils and the garlic flavoured oil.
6. Serve the fish on top of the green lentils topped with shallots and juniper berries.
