2 tsp whole green peppercorns
3 kaffir lime leaves, shredded finely
2 tbsp fish sauce
1 tsp brown sugar
Rest of Ingredients
salt and freshly ground black pepper
5 garlic cloves, chopped
4 large red chillies, deseeded and chopped
2 tsp finely chopped coriander root
3 tbsp groundnut (peanut) oil
1 tbsp hot water
10 to 15 fresh basil leaves
1 large red chilli, deseeded and cut into tiny strips, to garnish
method
1. Put all the Ingredients for the paste in a blender and blend until smooth.
2. Transfer this paste into a wok or a frying pan.
3. Heat and stir continuously for 4 minutes.
4. Increase the heat and add the minced pork and stir all the time for 3 minutes.
5. Add the rest of the Ingredients except the basil leaves and chilli strips, and continue stirring for 3 more minutes or until the meat is almost dry.
6. Put in the basil leaves and give just one more stir around.
7. Adjust the seasoning.
8. Garnish with chilli strips.
9. Serve hot with rice or a salad.

Rewrite the directions please

This recipe is impossible to follow because the ingredients list doesn't distinguish what ingredients are for the paste (step one), and you can't deduce what they are because the rest of the steps are also non-specific about the ingredients (step 5 "add the rest of the ingredients"). Would have liked to have tried it because the ingredients sound yummy, but the recipe is badly written.

This recipe, at first, seems to be hazy when you read it the first time, but if you read again, step by step, it is not so hard to follow; it's not impossible! The paste ingredients are:peppercorns, kaffir leaves, fish sauce and brown sugar. Heat this paste and add the pork and the other ingredients, except the basil leaves. Finish up following step 6,7,8,and 9. Bon appetite!
