Beef and Vegetable Pie

ingredients

serves: 6
500 g minced beef
75 g dried soya mince
200 ml boiling water
1 onion, peeled and finely chopped
1 clove garlic, peeled and finely chopped
2 x 400 g cans chopped tomatoes
250 g carrots, peeled and grated
150 g pack button mushrooms, wiped and cut into 4
1 vegetable stock cube
750 g old potatoes, peeled and quartered
1 tbls (15 g) 1/2 oz butter
4 tbsp milk

method

1. Place the minced beef in a large saucepan and cook over a moderate heat until the meat is brown. Drain off any excess liquid.

2. Place the soya mince in a heatproof bowl and pour over the boiling water, leave to stand for 1 minute.

3. Add the soya mince and liquid to the minced beef.

4. Add the chopped onion, garlic, tomatoes, carrots and mushrooms.

5. Crumble the stock cube into the saucepan and stir well to combine.

6. Cook over a medium heat for 20 minutes, stirring occasionally.

7. Cook the potatoes in lightly salted boiling water for approximately 20 minutes, until soft to the point of a knife.

8. Drain and mash with the butter and milk.

9. Pour the meat into a 20 x 30 cm shallow ovenproof dish.

10. Preheat the grill/broiler to a high heat. Spread the mashed potato over the top of the minced meat. Place under the grill/broiler until brown and crispy on top.

11. Serve with a green vegetable.
